How to Make Pizza Rustica (Pizzagaina)

This is my recipe for my delicious home made Pizza Rustica or as some people call it Pizzagaina. It’s an Easter tradition favorite in my home. Enjoy! – Hedy


Recipe: How to Make Pizza Rustica (Pizzagaina):
Makes 1 large Pizza Rustica. Cut recipe in half for smaller amount.
4 pounds ricotta
6 eggs beaten
1 cup grated Italian cheese
½ lb grated provolone cheese
1 whole pepperoni diced
2 pounds cooked sausage casing removed
1 lb shredded mozzarella cheese
One half inch thick slice of one of the following – ham, capicolla or prosciutto diced.
Pepper to taste. Do not add any salt as all the cheeses make it salty on its own.
Mix eggs into ricotta, then add remaining ingredients one at a time mixing well with each addition. Set aside.
Pizza Dough:
4 cups of bread flour
12 ounces of warm water (between 105 and 110 degrees)
1 package of yeast
1 teaspoon salt
1 teaspoon sugar
¼ cup of oil
Dissolve yeast in warm water 110 degrees. Add teaspoon of sugar. When yeast has proofed (foamed), add to flour. Add salt and oil to flour mixture. Knead until dough is soft and silky adding flour as needed. Cover with plastic wrap and let rise in warm place until double in bulk. Roll out dough on thoroughly floured surface into rectangular shape about ¼ inch thick. Place dough in large baking dish. Spread cheese mixture in pan and cover all of the mixture with dough. Bake in pre-heated oven at 350 degrees for approximately 45 minutes or until the dough is golden brown. You may eat this delectable appetizer hot, warm or cold. Either way it is delicioso!! Serves anywhere from 15 to 20 people depending on how you slice it.
